Oh, you must think I am a bit confused, eggs! Maybe. But I am not 100% in any camp of strictness when it comes to rawness or veganness what so ever. Except I am working on keeping away from wheat. All because I feel so much better when I keep wheat out of my food. Oh and that goes for cow's milk too. Darn it! I love cheese.
I have never been good at strict fundamentalism. I have learned to listen to my body. And then there is my relationship and view on eggs, which are based on these three questions. How happy and healthy are the chickens? Are they out in the yard scratching and clucking and eating bugs and such creepy crawlies? Are they fed organic chicken feed and table scraps? I get such a hoot out of "vegetarian fed chickens" (I know that this is meant to show that the chickens are not eating animal byproducts, which is a bad thing, but what about the bugs?)
I don't want to eat lots of eggs. But every once in a while my body craves an egg. So I indulge. This blog was not built on the strict fundamentals of one diet or another. It was built on what foods and their nutrients that have healed my body. I base much of this on how a meal feels inside of me after I eat the meal as well as how good it tastes during the meal. I can honestly say, eating a slice of really good pizza feels and tastes great in the moment of chewing and ingesting it on the spot. It is the helllish after affects where I regret ever thinking I was going to get away with eating that one slice! And another thing, I can't seem to mix dairy and an egg together. Just doesn't work. I just plain get sick. But an egg by itself still works.
This morning (a Saturday) I let myself sleep in some and sleepily day dream using the fuel of my morning hunger to create eggs florentine into full actuation. I got up thinking that I would surprise my roommate with breakfast. Except she came barreling out of her room heading straight for a Saturday work day. Um, I did not have the heart to tell her what I had planned. So it was a solo event, but even this was better than going out! Saving money, creating a quiet relationship with myself over a nice morning meal.
You will need 4 latkes for serving 2 and so on. I loved the sweet potato latkes for this dish. Substituting the chia seed for flax or egg made for a nice tender latke.
If you wanted to keep this really vegan you could make a tofu scramble to put on top of the latke and spinach. Vegan Word Fusion Recipe book has a great raw scramble in the back part of the book. I just wanted an egg this morning! And I lent my Vegan World Fusion book to Shelby and I cooked up the last of the cauliflower in last night's soup. and and and........I wanted an egg!
Mock Hollandaise Sauce
1/2 cup cashews
1/2 cup water
1 teaspoon stone ground mustard
1/2 teaspoon real salt
1/2 teaspoon ground turmeric
1 1/2 tablespoons fresh lemon juice
Pepper to taste
Blend everything on high speed in a high speed blender till creamy and warm. Use your hand on the outside of the blender jar to assess the heat.
2 oz. of fresh washed spinach per serving. Heat a saute pan on medium high. Have a lid for the saute pan ready. Place the spinach in a colander and rinse with water. drain slightly and place the wet spinach in the hot saute pan, cover and let wilt. Take off the heat and cover to keep the spinach warm.
Poached Eggs
Have plates ready next to the stove. While the eggs are poaching, place the latkes onto the plates, arrange a small pile of spinach on each latke, Give the mock hollandaise sauce a quick warming whirl in the blender:
Grease a sauce pan with some coconut oil and fill 1/3 full with water and heat to a low boil. Add your eggs gently one at a time and cover and adjust the heat so that the water continues to simmer but not boil. About 3 minutes (you can always check and recheck for the set of your yolks) Use a slotted spoon to scoop out each egg and place gently ontop of each spinach and latke. Drizzle the mock hollandaise sauce over each egg. Serve immediately with fresh fruit, a warm muffin and good music and hot tea or coffee.
